Tabbouleh (Parsley) Salad

Recipe ingredients:

1/4 cup burghul - fine cracked wheat
2 bunches parsley
4 tomatoes
1/3 bunch fresh mint leaves
½ onion
½ cup lemon juice
Salt to taste
½ cup extra virgin olive oil
a dash of all spice

 

Recipe preparation:

Wash and finely chop tomatoes.
Wash the burghul several times and drain. Soak it in chopped tomatoes for 20 minutes. In meantime wash, drain well and finely chop mint and parsley.
Chop onion and rub with salt.
Mix all ingredients in a salad bowl.
Add olive oil, lemon juice and all spice, and mix well.
