Salad Kyopoolu or Grilled Eggplant dip

Recipe ingredients:

1 eggplant
2 tomatoes
2 peppers
1 clove garlic
2 tablespoon vegetable or canola oil
Pinch of dried summer savory

Recipe preparation:

Slice the eggplant into half-inch-thick pieces lengthwise and grill both sides. Also grill the tomatoes and the peppers. Peel the eggplant, tomatoes and peppers and chop everything.

Crush garlic with salt, chop finely and add to vegetables. Add salt and rub vegetables.

Add oil and summer savory seasoning and mix well.

Serve as a side, as a dip or with toast.
