Potato Salad with Grilled Pepper

Recipe ingredients:

2 lb potatoes
3 tablespoons Salt
Water
1 green pepper
1 onion (or 2 green onions)
2 tablespoons vegetable or canola oil
3-4 stems fresh parsley

Recipe preparation:

Peel and cut potatoes into wedges; put in a saucepan with water and salt and boil until potatoes are soft. Drain and place into a salad bowl.

Grill the pepper and peel the skin off.

Chop onion and pepper and rub with a little salt (don't rub onion if using green); add to bowl.

Chop parsley, and add to potatoes.

Pour over the oil; mix well and taste for salt.

Serve as a side dish.
