Recipe preparation:
Divide dough into 12-15 balls and roll into 4 inch circles about 1/8-1/4 inch thick. Cover with cloth so the dough would not form harden on top.
Wash, drain well and chop fresh spinach. Lightly squeeze out moisture and place in large bowl. Add the finely chopped onion, salt and pepper to spinach, mix well and let stand for 5-10 minutes. Stir in lemon juice and oil.
Brown pine nuts in 2-3 tablespoons of butter and drain well. Add to spinach.
Place a small amount of spinach mixture in center of each round of dough. Form a triangular pie by drawing two sides of dough to the center and pinch shut a seam from center to the corner. Then pull up the remaining flaps of dough and do the same, leaving a small opening. Brush with olive oil.
Bake at 375F for 15-20 minutes until golden-brown on top and bottom. Serve warm with lemon wedges.
