Recipe preparation:
In a medium saucepan melt the butter, margarine and oil. Set aside to cool.
Mix four of the eggs and the fifth's egg yolk (save the white to put on top of the cookies before baking) with the sugar, until smooth consistency.
Mix the baking soda with the yoghurt, stir until it starts to rise and add to the egg mixture. Add the melted butter, vanilla, lemon zest and the juice from the lemon. Mix well, then add 1-cup flour and mix until it's smooth. Add the rest of the flour and make soft dough. Cover the dough and let it stand for half an hour.
Preheat oven to 350 ° F. Grease a baking pan and make small round cookies. Brush the cookies with the egg white, sprinkle with some sugar on top and put one piece of walnut in the centre as garnish. Place in the oven and bake until golden brown.
