Carrot Soup

Recipe ingredients:

2 tablespoons butter
1 onion
1 clove garlic
2 apples
4 carrots
1 quart chicken stock
1 teaspoon cumin
Croutons
Salt
Ground black pepper

Recipe preparation:

Chop onion, carrot, garlic and peeled and cored apple. Melt the butter in a saucepan. Put onion and garlic and saute until softened, then add apple and carrots and saute for 2 minutes. Slowly add the chicken stock and cumin. Bring to a boil, reduce heat and simmer until the apples and carrots are soft, about 15 to 20 minutes. Remove from the heat and puree. Season to taste with salt and pepper.

Serve with croutons.

Tips:

For children, substitute croutons (if they don't like it) with Gold Fish Crackers. They will surely like those!

Add chopped ginger (saute with apples and carrots) to the carrot soup for exotic carrot-ginger soup.
