Cake

Recipe ingredients:

2 eggs
1 cup sugar
1 cup plain yogurt
1 teaspoon baking soda
1 teaspoon liquid vanilla
1 teaspoon zest from orange or lemon (optional)
½ cup margarine
All purpose or whole wheat flour
½ cup chopped walnuts (optional)

Recipe preparation:

Preheat oven to 350 ° C.

Mix margarine and sugar until smooth, add eggs and vanilla. Put the baking soda into the yogurt and stir until it starts rising, and then add to the eggs mixture. Mix well.

Add 1 cup of flour and mix until mixture is smooth, then add the rest of the flour. Mix well, and then stir in the chopped walnuts.

Pour in a greased baking pan and bake in oven for 40-45 minutes. To check whether cake is baked inside, insert a skewer in the middle. Skewer will come out clean if cake is done.

Once baked, take the cake out of the oven and leave it to cool down for 15 minutes before taking out of the pan and cutting.

Tips:

  1. For breakfast or snacks children will love, serve with glass of milk or drinkable plain yogurt.
  2. Recipe is also great for making into muffins.
  3. Substitute walnuts with berries or other fruits as peaches, nectarines and apples (if using strawberries - chop or grate them first, same goes for peaches, nectarines and apples). You can also, substitute for another kind of nuts you and your children like (much more nutritious and healthy than chocolate chip).
