Bulgarian Red Wine Beef Stew

Recipe ingredients:

2 lbs beef marinating steak tip
3-4 onions
1 carrot
1 stick celery
1/3 cup oil
2 tablespoons tomato paste
1 tablespoon all purpose flour
1 teaspoon sweet paprika
200 ml red wine
Black pepper
2 bay leaves
Salt
2-3 stems of parsley
2 cups warm water


Recipe preparation:

Cut meat into 1½ inch pieces, chop onion, carrots and celery and sauté in oil over medium heat until the carrots soften. Add paprika, flour and tomato paste, sauté for 1 more minute, then add wine and warm water. Season with the black pepper and salt, add the bay leaves and let simmer over low heat for 30-45 minutes.

When done simmering sprinkle with chopped parsley and serve with Mashed Potatoes.
