Bean Soup

Recipe ingredients:

1 can of mixed beans
1 onion
1 medium carrot
3 tbsp. Oil
1 tsp. Sweet paprika
1 tbsp. All purpose flour
1/3 cup crushed tomatoes from can or bottle
2 tbsp chopped fresh Mint (or dried)
3-4 cups water
Salt to taste

Recipe preparation:

Open can with beans, drain and set aside.

Chop onion and cut carrot. In a saucepan heat the oil over medium heat and add onion and carrots and sauté for 2-3 minutes.

Add paprika to saucepan and then flour, stir for 1 minute then add crushed tomatoes, beans and water. Bring to a boil, reduce heat and then add mint and salt to taste.

Simmer for 10-15 more minutes. Garnish with fresh mint and serve hot.

Tips:

Serve this as a main meal with a side of Cabbage salad.
