Al Fattoush (Toasted Pita Bread Salad)

Recipe ingredients:

1/2 round pita bread
3 medium firm tomatoes
3 slender cucumbers
3 medium radishes
4 spring onions
1 medium onion
1/2 cup lemon juice
2 cloves garlic
1/2 teaspoon dried mint
2 tablespoon vinegar
1/2 cup olive oil
1 cup fresh mint leaves
1 cup chopped parsley
1 cup small purslane leaves
1/2 tablespoon ground sumac
1 sweet green pepper
1 teaspoon salt
8 crisp lettuce leaves

Recipe preparation:

Roast the pita bread and break into small pieces, set aside. Coarsely chop the green pepper, tomatoes, cucumber, radishes, mint leaves, parsley, purslane and onions. Mix together. Tear the lettuce into bite sized pieces and add to vegetables. Crush garlic with a little bit of salt and mix with olive oil, vinegar, dried mint, lemon juice and ground sumac. Pour garlic dressing over vegetables and mix well. Add the pita bread pieces.
